Ingredients• 4 large russet potatoes, washed • 3 tablespoons butter, melted • 1-2 teaspoons kosher salt • 1-2 cups cheddar cheese, shredded • 4-7 slices bacon, cooked and crumbled • green onions, optional, sliced, to taste • sour cream, optional
Preheat the oven to 400 degrees F.
Cover a baking sheet with foil and spray with nonstick spray.
Cut the ends off of the potatoes and discard them.
Slice the potatoes into 1/2-inch slices.
Brush both sides of the potato slices with butter and sprinkle with salt.
Place the potatoes on the prepared baking sheet in a single layer and bake until fork-tender, about 30 minutes. Flip the potato slices halfway through baking.
Top the slices with cheese, bacon, and green onions.
Return the slices to the oven and bake until the cheese is bubbly, for about 3-5 minutes.
Top with sour cream and more green onions and serve.
