Easy Roasted Sweet Potatoes

Once you taste Easy Roasted Sweet Potatoes you’ll be wondering if they are a side dish or a dessert. On the one hand, they are potatoes, which are traditionally served as a side. On the other hand, they’ve been roasted caramelized delicious with plenty of brown sugar to accent their natural sweetness; you could convince yourself you’re eating dessert early. In either case, you’ll fall in love with Easy Roasted Sweet Potatoes!


2 pounds sweet potatoes, peeled and cut into 1/2-inch pieces
2 tablespoons coconut oil, melted
3/4 teaspoon fine sea salt
1 tablespoon light brown sugar, lightly packed


Step 1

Preheat the oven to 425 degrees F.

Step 2

Add the sweet potatoes to a large sheet pan.

Step 3

Add the melted coconut oil, salt, and brown sugar on top, tossing to coat the sweet potatoes.

Step 4

Spread the sweet potatoes out to arrange in an even layer. Don’t overlap the potatoes or you’ll end up with steamed potatoes instead.

Step 5

Roast, flipping every 10-15 minutes, until golden brown and caramelized, about 27-35 minutes.

Step 6

Remove from the oven.
