Ingredients

3 garlic cloves, minced
1 tablespoon dried rosemary
salt, to taste
pepper, to taste
2 pounds boneless pork loin roast
1/4 cup olive oil
1/2 cup white wine

Directions

Step 1

Set the oven to 350 degrees F.

Step 2

Crush the garlic with your rosemary, salt and pepper, and make it into a paste.

Step 3

Score the meat with a sharp knife in several places and press in the garlic paste in the openings.

Step 4

Rub in the meat with the garlic mixture and oil.

Step 5

Place the pork loin into the oven, turning and basting the pork with the pan liquids.

Step 6

Cook it until the pork is no longer pink in the center, about 1 hour. A thermometer inserted in the center should read 145 degrees F when the pork is fully cooked.

Step 7

Remove the roast to a platter.

Step 8

Heat the wine in the pan and stir to loosen browned bits of food on the bottom.

Step 9

Serve and enjoy!
