Easy Roasted Butternut Squash

All you need is butternut squash, olive oil, and salt, and you’ll be on your way to roasted perfection! Pop the squash in the oven for less than an hour, and it’ll come out tender, lightly golden, sweet, and absolutely delicious! Serve Roasted Butternut Squash with any entree of your choice and enjoy a side dish that is delightfully flavorful and super low-effort.


2-3 pounds butternut squash, cubed
1–2 tablespoons olive oil
fine sea salt, to taste


Step 1

Preheat the oven to 400 degrees F.

Step 2

Peel and cut the butternut squash into the desired cube size.

Step 3

Drizzle the diced squash with a tablespoon or two of the olive oil, tossing until the squash is evenly coated.

Step 4

Arrange the squash in an even layer (no overlapping) on a large baking sheet.

Step 5

Season the squash with the salt, plus any extra preferred seasonings.

Step 6

Cook the butternut squash until the squash is tender and lightly golden on the edges, about 40 minutes.

Step 7

Remove the squash from the oven.
