• 1 (4-pound) round roast • 1/4 cup extra-virgin olive oil • 3 garlic cloves, minced • 1 tablespoon fresh rosemary, chopped • 1 tablespoon fresh thyme leaves, chopped • 2 teaspoons kosher salt • 1 teaspoon black pepper, freshly ground


Step 1

Allow the roast to sit uncovered at room temperature for 1 to 2 hours.

Step 2

Preheat the oven to 450 degrees F.

Step 3

In a small bowl, combine the oil, garlic, rosemary, thyme, salt, and pepper.

Rub the mixture all over the roast.
