Easy Peasy Peachy Barbecue Chicken is barbeque without the grilling, but never lacking in flavor! Savory, fatty, dark meat chicken drumsticks are slow-cooked to tender juiciness, so you can set it and forget it! Moreover, it cooks the chicken in a tangy, thick, sweet barbeque sauce you'll want to lick from your fingers. Easy Peasy Peachy Barbecue Chicken takes no effort at all, so you can get the cookout started while barely lifting a finger... until it's time to dig into these drumsticks, that is.


Ingredients

2 1/2-3 pounds of chicken drumsticks, skinned
1 cup barbecue sauce
1/3 cup apricot or peach preserves
2 teaspoons yellow mustard
fresh peaches, optional, for garnish, cut into wedges

Directions

Step 1

Place the chicken in a 3 1/2- to 4-quart slow cooker.

Step 2

In a small bowl, stir the barbeque, preserves, and mustard together. Pour the sauce over the chicken.

Step 3

Cover and cook on low until the chicken is cooked through and tender, about 6-8 hours.

Step 4

Transfer the chicken to a serving dish, covering it to keep it warm.

Step 5

Transfer the sauce to a medium saucepan. Bring the sauce to a boil over high heat.

Step 6

Reduce the heat to low and let the sauce simmer uncovered, until the sauce has thickened, about 10 minutes.

Step 7

Serve the chicken with the sauce and garnish with fresh peaches.
