Ingredients

1 tablespoon olive oil
4 (4-ounce) chicken breast halves, boneless and skinless
1 (14.5-ounce) can of no-salt-added stewed tomatoes
1 cup water
1 teaspoon dried oregano
1/4 teaspoon garlic powder
1 1/2 cups instant brown rice
1 (12-ounce) package frozen cut green beans
12 pitted Greek olives, halved
1/2 cup feta cheese, crumbled

Directions

Step 1

In a large nonstick skillet, warm the oil.

Step 2

Brown the chicken on each side in the oil.

Step 3

Stir in the tomatoes, water, oregano, and garlic powder to the chicken.

Step 4

Bring the chicken mixture to a boil, then reduce the heat.

Step 5

Cover the skillet and simmer for 10 minutes.

Step 6

Stir the rice and the green beans into the chicken mixture.

Step 7

Return to a boil. Cover and simmer until an instant thermometer inserted into the chicken read 165 degrees F and the rice is tender, about 8-10 minutes.

Step 8

Stir in the olives and sprinkle with the cheese.

Step 9

Serve.
