This simple salmon recipe is a dinnertime trifecta: healthy, filling, and quick. And one more thing: it’s easy to clean up as all the ingredients cook inside aluminum foil (hence the name). Fresh lemon juice and fresh dill brighten up the flavor profile, while butter and garlic give the salmon a comforting richness. Serve the Easy Lemon Salmon in Foil alongside a side salad or wild rice for a well-rounded meal.

• 1/2 cup unsalted butter, melted • 1/4 cup lemon juice, freshly squeezed • zest of 1 lemon • 3 cloves garlic, minced • 1 teaspoon dried dill, or more to taste • kosher salt, to taste • freshly ground black pepper, to taste • 2 pounds salmon filet • 2 tablespoons dill, optional, chopped fresh, for garnish

Step 1

Set the oven temperature to 375 degrees F.

Step 2

Prepare a baking sheet by lining it with aluminum foil.

Step 3

Whisk the melted butter, lemon juice, lemon zest, garlic, dill, salt, and pepper together in a small mixing bowl.

Step 4

Place the salmon over the aluminum foil on the prepared baking sheet, skin side up.

Step 5

Fold up all four sides of the aluminum foil. Drizzle the butter mixture over the salmon, then seal the foil packet until closed.

Step 6

Bake in the oven until the salmon flakes easily with a fork, about 15-20 minutes. Remove from the oven, garnish with dill, and serve at once.
