Easy Italian Chicken Skillet features several of the classic flavors of Italian cuisine all in one pan. Mellow garlic and bright tomatoes combine with fresh, herby basil for that under-the-Tuscan-sun taste. Perfectly cooked chicken brings the savory sensations and parmesan cheese adds a refreshing and addictive sharpness that makes Easy Italian Chicken Skillet such a fantastic main course. 2 tablespoons extra-virgin olive oil, plus more as needed
1 1/2 pounds chicken thighs, skinless and boneless
1/2 cup onion, chopped
2 cloves garlic, minced
2 cups heirloom cherry tomatoes, sliced in half lengthwise
4 cups baby spinach
1/4 cup basil, chopped
2 tablespoons parmesan cheese, shredded, plus more to taste
salt, to taste
ground black pepper, to taste


Step 1

In a large skillet over medium-high heat on the stove-top, heat the olive oil.

Step 2

Add the chicken and cook until it's just starting to be cooked through and is browned on both sides, about 4-5 minutes. Set the chicken aside.

Step 3

Add the onion and cook for 3-4 minutes.

Step 4

Add the garlic and cook until it is fragrant and the onion in the skillet is tender and slightly golden-brown, for about 1-2 minutes.

Step 5

Return the chicken to the skillet.

Step 6

Add the tomatoes and cook for 2-3 minutes.

Step 7

Add the basil and spinach and cook until the spinach is wilted, for about 2-3 minutes.

Step 8

Using a meat thermometer, check that the thickest part of the chicken reads 165 degrees F. If not, continue sautéing until fully cooked through.

Step 9

Stir in the parmesan and season with salt and pepper.

Step 10

Serve hot.
