IngredientsFor the chicken: • 1 pound chicken breast, skinless and boneless • 1 teaspoon smoked paprika • 1/2 teaspoon Italian seasoning • 1/4 teaspoon salt • 2 tablespoons olive oil, divided For the potatoes: • 1 tablespoon olive oil • 2 tablespoons unsalted butter, melted and divided • 8 cloves garlic, peeled • 12 ounces potatoes, cut into wedges • 1/4 teaspoon salt • Italian seasoning, to taste • 1 teaspoon fresh rosemary, optional, roughly chopped • 1 tablespoon olive oil
In a large resealable bag or in a large bowl, add the chicken, smoked paprika, Italian seasoning, salt, and 1 tablespoon of the olive oil.
Mix well, massaging so the chicken becomes well-coated, and set aside to let marinate.
Over medium-low heat, heat a cast-iron skillet.
Add 1 tablespoon of the olive oil and butter to the hot skillet.
Add the garlic, potatoes, and rosemary to the skillet and cook until the outside of the potatoes are golden brown and the insides are cooked through, about 10-15 minutes.
Transfer the potatoes from the skillet and set aside.
In the same skillet on medium heat, add the remaining 1 tablespoon of olive oil.
Cook the chicken on each side until cooked through (reading 165 degrees F in the center with a meat thermometer), about 4-5 minutes.
Move the chicken to one side of the skillet and add back the potatoes to the other side.
Season with salt to taste.
After the potatoes are fully heated, remove from heat and serve immediately.
