Ingredients• 10 large egg, plus more as needed • 2 cups milk, plus more as needed • 3 cups cheddar cheese, grated • 6 slices day-old bread, cut into 3/4-1 inch-wide cubes • salt, to taste • pepper, to taste • Optional fillings: • 1 cup sausage, cooked • 1 cup ham, cooked and cubed • 1/2 cup broccoli, chopped • 1/2 cup mushrooms, chopped • 1/4 cup green onions, chopped • 1/4 cup onions, chopped and cooked • 1 cup corn • 4 slices bacon, cooked and chopped
Preheat the oven to 350 degrees F.
Butter a 9x13-inch casserole dish.
Beat the eggs in a large bowl.
Mix in the milk and cheese.
Add the bread and carefully stir until all pieces of bread are moistened. Don't over mix or the bread may disintegrate.
Add salt and pepper, moderating the amount added depending on your choice of fillings. For example, if using sausage, you should use a tiny amount of salt and pepper. If you have a lot of additions, you might need a couple more eggs to make sure that everything is at least touching some egg mixture. Whisk in 2 tablespoons of milk for every beaten egg you add.
Pour the mixture into the prepared casserole dish.
Bake until the top is browned and the center springs back when touched, about 50 minutes-1 hour.
Remove from the oven and let cool for 10 minutes before serving.
