It only takes 20 minutes to make Crispy Fried Catfish, so you can enjoy its tasty flavors any night of the week without stress. Ingredients

• 1 cup yellow cornmeal • 1 tablespoon seasoned salt • 1/4 teaspoon pepper • 1/4 teaspoon garlic powder • 1 cup milk • 3 tablespoons vegetable oil • 3 tablespoons butter • 4 (4-ounce) catfish fillets • lemon wedges, optional, for garnish • fresh parsley, optional, for garnish

Directions

Step 1

Combine the cornmeal, seasoned salt, pepper, and garlic powder in a shallow dish.

Step 2

Pour the milk into a separate dish.

Step 3

Heat the oil and butter in a large skillet over medium heat.

Step 4

Dip each catfish fillet in the milk, shaking off any excess.

Step 5

Transfer the milk-soaked fish to the cornmeal mixture, gently rolling each fillet in the mixture until coated.

Step 6

Place the coated fillets in the hot skillet and cook until cooked through at 145 degrees F and golden brown on each side, about 5-7 minutes. Cook in batches so you don't overcrowd the skillet.

Step 7

Drain the fish on paper towels.

Step 8

Serve warm garnished with lemon wedges and fresh parsley.
