Crispy Fish Sticks

Fish sticks should just be school cafeteria fare or baked up from the frozen section. Crispy Fish Sticks show just how good fish sticks can be when you make them from scratch: the fish is extra flaky and flavor, the coating is crispier and with better seasoning, and they’re perfect for serving with fries! Best of all, it only takes 30 minutes to make your own Crispy Fish Sticks, so it’s great for when you want to shake up your weeknight dinners!
Using a sharp knife, slice the fish filets into 3/4-inch wide strips.
Season the fish strips with salt and pepper.
In a shallow bowl, whisk together the egg and half and half.
In another bowl, add the flour.
In the final bowl, combine the breadcrumbs, garlic powder, and Italian seasoning.
Dip each fish filet strip in the flour, then in the egg mixture, then in the breadcrumbs. Coat each strip thoroughly and shake off any excess.
Repeat with each fish stick.
Heat a pan over medium-high heat.
Add the vegetable oil.
Add the coated fish strips in batches and fry until golden brown and cooked through at 145 degrees F, about 3-4 minutes per side.
