But Crack Chicken Casserole also bursts with sharp cheddar and bright carrots and peppers, all of which accent and enhance the chicken taste. You can transform a rotisserie chicken into a complete meal in one fell swoop and make it even more delicious with this dish.
Ingredients
• 1 (7 ounce) box chicken-flavored rice and pasta mix • 1 cup carrots, thinly sliced • 1/2 cup green pepper, chopped • 1/2 cup onion, finely diced • 1 (10.5 ounce) can cream of chicken soup • 1 cup sour cream • 2 cups chicken breast, cooked and chopped • 1/2 teaspoon black pepper • 1/2 cup sharp cheddar cheese, shreddedDirections
Preheat the oven to 350 degrees F.
Prepare a 9x13-inch baking dish by spraying it with non-stick cooking spray.
Cook the boxed rice according to package instructions.
During the last 5 minutes of cooking the rice, add in the green pepper, carrots, and onion.
Add the cream of chicken soup and sour cream and stir to combine.
Add the chicken breast and black pepper, stirring to combine.
Remove the pan from the heat.
Pour the contents of the pan into your prepared baking dish.
Sprinkle cheese over the top of the chicken rice mixture.
Bake in a preheated oven for 30 minutes.
Serve immediately.
