Country Potato Pancakes, also known as latkes, prove that pancakes don't have to be sweet to be amazing! Fluffy and hearty potatoes are transformed into crispy patties perfect for piling high with your favorite toppings, like tangy sour cream and jammy applesauce. You can serve up Country Potato Pancakes with eggs and coffee or eat them all on their own! You can even serve them alongside donuts for a true carbo-load of joy!


Ingredients

3 large potatoes, peeled
2 large eggs, lightly beaten
1 tablespoon onion, grated
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
vegetable oil, for frying
sour cream, optional, to taste, for topping
applesauce, optional, to taste, for topping

Directions

Step 1

Finely grate the potatoes.

Step 2

Drain any liquid from the potatoes, pressing and squeezing the potatoes as much as possible. The less liquid in the potatoes, the better the texture.

Step 3

Add the eggs, onion, flour, salt, and baking powder to the grated potatoes, mixing until everything is as combined as possible.

Step 4

In a frying pan, add the oil until it is 1/8-inch deep.

Step 5

Heat the oil over medium-high heat.

Step 6

Once the oil reaches 375 degrees F, drop the potato batter by heaping tablespoonfuls into it.

Step 7

Flatten each drop of batter into a patty.

Step 8

Fry until golden brown, about 3-4 minutes per side.

Step 9

Serve immediately with sour cream and applesauce.
