Ingredients• 3 tablespoons butter • 2 pounds ham, fully cooked and sliced into 1/2-inch pieces • 1 1/2 pounds of potatoes, peeled, quartered, and cooked • parsley, to taste
In a large skillet over medium-high heat, add the butter and ham.
Brown the ham on both sides until heated through, about 2-3 minutes per side.
Move the ham to one side of the skillet and add the potatoes.
Brown the potatoes in the ham drippings until tender, about 6 minutes.
Sprinkle the potatoes with the parsley.
Plate and serve.
