Country Biscuits and Chicken

If you're not eating Country Biscuits and Chicken while sitting in a rocking chair on a wrap-around front porch overlooking the rolling hills while sipping a mason jar filled with sweet iced tea, well, by golly, at least imagine that you are. The filling is exploding with tasty garden vegetables cloaked in a savory creaminess. Better yet, you get an entire garlic-y, fluffy biscuit topping with every serving. Indulging in the bliss that is Country Biscuits and Chicken will surely have you smiling until the cows come home.

Preheat the oven to 425 degrees F.
Spray a 2-1/2- to 3-quart casserole dish with cooking spray and set aside.
In a small bowl, whisk together 2 cups chicken broth and 1 cup half-and-half until smooth. Set aside.
Melt 1/3 cup butter in a large skillet over medium-high heat.
Add the onion, carrot, and celery, sautéing until the vegetables are soft, about 10 minutes.
Add the flour to the vegetable mixture and stir until the vegetables are covered, for about 1 minute.
Reduce the heat to medium and gradually stir in the chicken broth mixture.
Continue cooking the filling over medium heat, stirring regularly, until thick and bubbly, about 5-6 minutes. Make sure the filling does not boil.
Stir the salt and pepper into the filling.
Add the cooked chicken and frozen peas to the filling.
Transfer the filling to the prepared casserole dish.
Cover the casserole dish with foil and bake until the filling is warm throughout, for about 10-15 minutes.
In a medium bowl, use a fork to stir together the Bisquick mix, buttermilk, cheese, and parsley until a soft dough forms.
Take the filling out of the oven and remove the foil cover.
Stir the filling.
Use a large scoop or spoon to drop about 1/4 cup of the biscuit dough at a time onto the filling. There should be about 8 biscuits on top of the filling.
Return the dish to the oven and bake, uncovered, until the biscuits are golden brown and a toothpick inserted into the biscuit comes out clean, about 12 minutes.
Stir together 2 tablespoons melted butter and 1/8 teaspoon garlic powder.
Pull the dish out of the oven and brush the butter mixture over the biscuits.
Serve hot.
