Ingredients
Directions
Pulse the breadcrumbs together in a food processor until very fine.
Add the chicken pieces, milk, and eggs to a large Ziplock bag and squish together or shake to combine.
Place the bag with the chicken in the refrigerator for 15-20 minutes.
Fill a large pot or Dutch oven with about 3 inches of peanut oil.
Heat the oil to 365-375 degrees F and watch the temperature carefully throughout the cooking process.
In a large mixing bowl, whisk together the pulsed breadcrumbs, flour, salt, white pepper, powdered sugar, and chili powder.
Dredge the chicken pieces in the breadcrumb mixture and allow them to dry for a few minutes.
Working in small batches, fry the chicken until golden brown and crisp, about 4 minutes. Working in batches prevents the oil from cooling and ruining the cooking.
Transfer the chicken to a wire rack or sheet pan. Do not dry on paper towels as the nuggets will get soggy from the steam.
Serve hot!
