Coastal Crab Stick Salad

Summertime needs sunshine, tropical drinks, and some fresh seafood. Coastal Crab Stick Salad certainly delivers on the latter with plenty of sweet and salty crab meat! Add in some sweet corn, crunchy cucumber, and hearty hard-boiled eggs and you have a refreshing salad that will whet your appetite and leave you wanting more. Coastal Crab Stick Salad is easy to make and wonderful to share and snack on!


• 1/2 cup rice, uncooked • 3 eggs, hardboiled • 11 ounces crab meat, imitation, cut into bite-sized pieces • 1 English cucumber, chopped • 1 (14.5 ounce) can corn • 3 tablespoons mayonnaise • 3 tablespoons yogurt • dill, chopped, to taste • 1/2 teaspoon ground black pepper • 1 teaspoon salt


Step 1

Cook the rice according to package directions.

Step 2

Allow time for the rice to cool.

Step 3

Peel and chop the eggs.

Step 4

Mix together the cooked rice, eggs, crab meat, cucumber, corn, mayo, yogurt, and dill in a large bowl.

Step 5

Season with the pepper and salt.

Step 6

Let the salad chill for at least 30 minutes.

Step 7

Serve chilled.
