Classic Wassail is the old name for Mulled Cider, the warming, sugared and spiced brew with ancient English roots. Unlike other ciders, Classic Wassail has brightness from citrus juices and autumnal flavor from cinnamon and cloves. Warmed and celebratory, this mulled cider is the kind you sip with sighs of happiness even as the wind gets chilly outside. Winter doesn’t truly begin until you have a mug of this in your hands.

Ingredients

• 2 gallons apple cider • 2 cups fresh orange juice • 1 cup lemon juice • 1 cup pineapple juice • 1 cup white sugar • 1 teaspoon whole cloves • 1 cinnamon stick, broken into pieces

Directions

Step 1

Mix together the apple cider, orange juice, lemon juice, pineapple juice, and sugar into a large-sized pot over medium-low heat on the stove-top.

Step 2

Place the cloves and the cinnamon together in a tea ball.

Step 3

Add the ball into the apple cider mixture and let the mixture simmer until it is warmed through, about 15 minutes.

Step 4

Serve from the pot, using a large ladle, into your favorite holiday mugs.
