Ingredients

1 (6 ounce) box stuffing mix or 3-4 cups homemade stuffing
1 1/4 cup hot water, if using boxed stuffing
2 cups chicken, cooked and diced
1/3 cup sour cream
1 (10.5 ounce) can cream of chicken soup
3 cups frozen mixed vegetables, defrosted

Directions

Step 1

Preheat the oven to 400 degrees F.

Step 2

Combine the boxed stuffing mix and hot water in a large mixing bowl.

Step 3

Prepare a 9x13-inch baking dish with non-stick cooking spray or grease.

Step 4

Add the chicken, sour cream, cream of chicken soup, and mixed vegetables to the prepared dish.

Step 5

Top with the stuffing.

Step 6

Place the casserole in the oven and bake until the mixture is bubbling and the top is golden, about 25-30 minutes.

Step 7

Serve hot.
