Ingredients
Directions
Whisk the soy sauce and cornstarch together in a small mixing bowl.
Add the chicken broth, oyster sauce, sesame oil, and honey and whisk until well-combined.
Heat 1 tablespoon of the vegetable oil in a larger non-stick saute pan over medium-high heat.
Pat the chicken dry and season it with salt.
Cook the chicken in a saute pan until cooked through, registering 165 degrees F when tested with a meat thermometer, about 6-7 minutes.
Transfer the chicken to a plate, leaving the oil in the pan.
Add the remaining 1 tablespoon of the oil to the skillet.
Cook the carrots and onions until tender, about 5 minutes.
Add the broccoli, bell pepper, peas, ginger, and garlic, sauteing for 4 minutes.
Give the soy sauce mixture another stir, then add it to the pan and cook, stirring constantly, until the veggies are well-coated and tender, about 2-3 minutes.
Add the chicken and toss.
Add more soy sauce, if desired.
Serve immediately over rice.
