If you love chicken salad with all the fixings, this recipe for Chicken Salad is sure to please! It packs plenty of crunch from apples, celery, grapes, and nuts, and has all the traditional chicken salad taste from chicken breast and mayo. Eat Chicken Salad as a sandwich, with some crackers, or serve it over a bed of greens!


Ingredients

7 ounces rotisserie chicken breast, chopped
1 medium apple, peeled and cut into small cubes
1 cup red seedless grapes, cut in half
1/2 cup celery, chopped
1/4 cup light mayonnaise
kosher salt
pepper
2 tablespoons pecans or walnuts
6 cups mixed baby greens (such as spinach and arugula)

Directions

Step 1

Cut and chop the rotisserie chicken into small pieces.

Step 2

In a medium bowl, combine the mayonnaise with salt and pepper.

Step 3

Add in the chicken, grapes, apples, and celery. Mix together to combine.

Step 4

Allow it to chill in the refrigerator until you are ready to eat it.

Step 5

Mix in your nuts of choice right before serving.

Step 6

Serve over a bed of greens for a well-balanced meal!
