Chicken Fiesta Casserole

There's no rule that says you can't party during the week, and Chicken Fiesta Casserole is here to enforce that! Energize your weeknight meal with some tender chicken thighs, sweet bell peppers, and crispy onions; all tossed in your favorite fajita seasoning. The party really gets going thanks to the creamy sour cream, rich cream cheese, and handfuls of savory cheddar cheese that melt in the mixture to create an ooey-gooey occasion. Garnished with all your favorite Tex-Mex toppings, Chicken Fiesta Casserole will host a beloved bash for your tastebuds!


6 (4-6-ounce) chicken thighs or breasts, boneless, skinless, and cut into 1-2-inch pieces
1 tablespoon olive oil
4 bell peppers, sliced
1 small onion, sliced
1 (1-ounce) packet of fajita seasoning
1 cup sour cream
4 ounces cream cheese, softened
2 cups cheddar cheese, grated


Step 1

Preheat the oven to 350 degrees F.

Step 2

In an oven-safe skillet, over medium heat, sauté the chicken in the oil until no longer pink and an instant thermometer inserted into the center reads 165 degrees F, about 7-10 minutes.

Step 3

Transfer the chicken out of the skillet and set it aside.

Step 4

Add the onions and peppers to the skillet and sauté until they are tender, for about 3-5 minutes.

Step 5

Add the chicken back to the skillet and stir in the fajita seasoning, sour cream, and cream cheese. Mix well.

Step 6

Sprinkle the chicken mixture with cheddar cheese.

Step 7

Bake until the cheese is bubbly, about 20 minutes.

Step 8

Serve with your favorite Tex-Mex garnishes like guacamole, sour cream, salsa, and/or hot sauce.
