This recipe for Cheesy Meatloaf Cups combines all the best elements of pizza (meat, sauce, and cheese) into a bite-size dish that can be baked in a muffin tin. Cheesy Meatloaf Cups would even work as appetizers with a side of pizza sauce to dip them into. The gooey burst of cheese when you bite into them is too tasty to resist. Plus it’s low-carb, so the health-conscious can enjoy the same great flavors!


Ingredients

1 large egg, lightly beaten
1/2 cup pizza sauce
1/4 cup seasoned bread crumbs
1/2 teaspoon Italian seasoning
1 1/2 pounds ground beef
1 1/2 cups part-skim mozzarella cheese, shredded
additional pizza sauce, optional, for serving
basil leaves, optional, for serving

Directions

Step 1

Preheat the oven to 375 degrees F.

Step 2

Mix the egg, pizza sauce, bread crumbs, and Italian seasoning in a large bowl.

Step 3

Add the beef, and mix lightly but thoroughly.

Step 4

Divide the mixture into 12 portions, then press each portion onto the bottom and up sides of a greased muffin cup.

Step 5

Add the cheese to the centers.

Step 6

Bake them until the meat is cooked through, about 15-18 minutes.

Step 7

Top them with additional sauce and basil before serving.
