Ingredients• 1 1/2 cups water • 1 teaspoon instant vegetable bouillon granules • 1/2 cup quick-cooking grits • 1/4 cup green onions or chives, finely chopped • 1/2 cup cheddar cheese, shredded and divided • 2 eggs, slightly beaten • 1/2 cup milk • 1 (8 ounce) can cream-style corn • 1/4 cup cheddar cheese, shredded
Preheat the oven to 350 degrees F.
Lightly grease a 1-quart casserole dish.
In a medium saucepan, bring the water and vegetable granules to a boil.
Gradually stir in the grits.
Remove the saucepan from the heat.
Cover and let the grits stand for 5 minutes.
Stir in the onion and 1/2 of the cheddar cheese.
Stir in the eggs, milk, and corn.
Transfer the grits to the prepared casserole dish.
Bake, uncovered, until set in the center, about 45-50 minutes.
Sprinkle the top of the grits with the remaining cheese.
Let it stand 1-2 minutes before serving to melt the cheese.
