With just the right amount of heat to warm you up on a cold night, Cheesy Chili is like a culinary winter coat for when things get frosty! And you can whip it up in less than 30 minutes!


Ingredients

2 pounds ground beef
2 medium onions, chopped
2 garlic cloves, minced
3 (10 ounce) cans diced tomatoes and green chiles, undrained
1 (28 ounce) can diced tomatoes, undrained
2 (4 ounce) cans green chiles, chopped
1/2 teaspoon black pepper
2 pounds Velveeta, cubed
Optional additions for serving:
sour cream
jalapeño, sliced
tomatoes, chopped
fresh cilantro, minced

Directions

Step 1

In a large saucepan on the stove-top over medium heat, cook the ground beef, garlic, and onions until the meat is no longer pink, about 5-7 minutes.

Step 2

Crumble the meat and then drain the excess liquid from the pan.

Step 3

Mix in the can of tomatoes and chiles, the can of tomatoes, and the 2 cans of chiles. Bring the mixture to a boil.

Step 4

Reduce the heat and let simmer uncovered for about 10-15 minutes.

Step 5

Stir in the Velveeta cheese until fully melted.

Step 6

Top with jalapeños, sour cream, tomatoes, and cilantro.

Step 7

Serve immediately.
