Ingredients
• 2 heaping cups crispy rice cereal or crushed corn flakes • 4 large eggs • 2/3 cup milk • 1/4 cup all-purpose flour • 1/4 cup granulated sugar • 1/4 teaspoon salt • 1 teaspoon ground cinnamon • 1 teaspoon vanilla extract • 8 thick slices bread, of your choice • syrup, optional, for servingDirections
Preheat the griddle to 350 degrees F or or heat a skillet over medium heat.
Add the cereal to a shallow pie dish or plate. Add the eggs, milk, flour, sugar, salt, cinnamon, and vanilla in a blender and whisk. It's okay if the flour doesn't mix in completely.
Add the batter to a separate shallow dish.
Dip each piece of bread into the egg mixture on both sides.
Press the battered bread gently into the cereal, flipping to coat both sides.
Melt a small piece of butter in the skillet or griddle or grease with cooking spray.
Place the bread slices on the hot skillet and cook until golden on the bottom, about 3 minutes.
Flip and cook on the other side for another 3 minutes.
Serve warm with your favorite syrup.
