Toss the shrimp in a bowl with the 3 tablespoons of the cajun seasoning.
Heat 2 tablespoons of the olive oil over medium-high heat in a large skillet.
Once heated, cook the shrimp until pink, about 2 minutes per side.
Transfer the shrimp to a plate and set it aside.
In the same skillet, cook the sausage until heated through, about 3 minutes.
Transfer the sausage to a plate and set it aside.
In the same skillet, heat the remaining 3 tablespoons of the oil.
Add the onion, the red pepper, the mushrooms, and the remaining 1 teaspoon of the cajun seasoning.
Stir and cook until the vegetables are tender, about 3-5 minutes.
Add the garlic to the skillet and allow to cook, stirring constantly, until fragrant, about 30 seconds.
Add in the tomatoes, the broth, the milk, and the butter.
Bring the skillet mixture to a simmer.
Add in the corn starch, whisking constantly to avoid clumps.
Scrape the pan to break up and incorporate any brown bits on the bottom of the skillet.
Simmer until the sauce thickens, about 5 minutes.
Add the penne, the shrimp, and the sausage to the skillet.
Toss together and allow to heat through.
Garnish with the cheese and green onions, and serve immediately!
