Brown Sugar Oatmeal Cookies

Brown Sugar Oatmeal Cookies just taste like nostalgia, don’t they? That molasses flavor and hearty chew, the notes of floral vanilla and earthy’s a beautiful taste of childhood. Brown Sugar Oatmeal Cookies are just as light and warming as you remember them, and taste even better. Get that oven ready to start making these by the dozen, especially because it takes 30 minutes or less to make!


2 cups packed dark brown sugar
1 cup (2 sticks) salted butter, softened
2 teaspoons vanilla extract
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
3 cups old-fashioned oats


Step 1

Preheat the oven to 350 degrees F.

Step 2

In the bowl of a stand mixer, beat the butter and brown sugar together until fluffy.

Step 3

Beat in the vanilla extract.

Step 4

Add in the eggs one at a time, scraping the bowl after each one.

Step 5

Mix together the salt, flour, and baking soda in a separate medium bowl.

Step 6

Add the flour mixture into the creamed mixture in 2-3 batches, mixing until just combined each time.

Step 7

Then, mix in the oats until just combined. Be careful not to overmix.

Step 8

Using a cookie scoop or a spoon, place portions of the dough onto baking sheets, spacing them a couple of inches apart.

Step 9

Bake until dark and chewy, about 12-13 minutes.

Step 10

Let the cookies slightly cool before serving.
