Breakfast Hack Egg Muffins offer fluffy and savory bites of bacon, cheddar, and jalapeño, perfect for grabbing on the go. You can even freeze them so they're ready after a quick pop in the microwave, or slip them in between two slices of toast for a wonderful egg sandwich experience. Ingredients
• 12 eggs
• 1/2 cup milk
• 1 teaspoon salt
• 1/2 teaspoon pepper
• 1 pound bacon, cooked, chopped, and divided
• 2 cups cheddar cheese, shredded and divided
• 2 jalapeños, seeded, diced and divided
• fresh cilantro, optional, chopped
Directions
Step 1
Preheat the oven to 350 degrees F.
Step 2
Grease a 12 cup muffin tin.
Step 3
In a large mixing bowl, whisk together the eggs, milk, salt, and pepper.
Step 4
Pour 1/2 of the bacon, 1/2 of the cheddar cheese, and 1/2 of the jalapeños into the prepared muffin cups.
Step 5
Pour the egg mixture into the muffin cups, filling each cup about 1/2 full.
Step 6
Top with the remaining bacon, cheddar cheese, and jalapeños.
Step 7
Bake on the center rack for 20-25 minutes.
Step 8
Top with the cilantro and serve!
