Brazilian Cheese Bread

Brazilian Cheese Bread seems impossible for a few reasons. They're impossibly good, with a stretchy, pillowy texture packed with your favorite cheese flavors. They're impossibly easy to make, with just a few simple ingredients and a few steps. And they're ready in under 30 minutes, which definitely seems impossible for how good they taste. Yet Brazilian Cheese Bread is very real and makes a very real (and very positive) impression on your Thanksgiving table!


1 large egg, room temperature
1/3 cup extra virgin olive oil
2/3 cup milk
1 1/2 cups tapioca flour
1/2 cup cheese, grated, of your preference
1 teaspoon salt, or more to taste


Step 1

Preheat the oven to 400 degrees F.

Step 2

Grease the wells of a muffin tin.

Step 3

Put all of the ingredients into a blender and pulse until smooth and thoroughly combined.

Step 4

Pour the batter into the wells of a muffin tin, being careful to leave about 1/8 inch of space at the top.

Step 5

Bake the batter until puffy and browned, for about 15-20 minutes.

Step 6

Remove from the oven and let cool for a few minutes.

Step 7

Serve warm!
