Blueberry Crumb Bars don't need fancy frostings, sparkly sprinkles, or firework presentations to amaze. All they need is their classic, homemade taste. The crust and crumble are rich and crunchy, while the filling is sweet, tart, and fruity. Blueberry Crumb Bars are easy to make and designed to make you smile with each bite. It's as simple as that. Plus they're even better the next day, although you may have trouble resisting the temptation to bite into them immediately!


Ingredients

For the crumb:
3 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, cold and cut into small cubes
1 egg
For the blueberry filling:
1/2 cup granulated sugar
4 teaspoons cornstarch
3 tablespoons lemon juice
4 cups fresh blueberries

Directions

Step 1

Preheat the oven to 375 degrees F.

Step 2

Lightly grease a 9x13-inch baking pan.

Step 3

In a medium bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt.

Step 4

Using a fork or a pastry cutter, blend in the butter. Try to keep the butter as cold as possible as you combine it.

Step 5

Blend in the egg until a crumbly dough forms.

Step 6

Press 1/2 of the dough into the prepared pan.

Step 7

In a separate large bowl, whisk together the remaining sugar with the cornstarch and lemon juice.

Step 8

Gently fold in the blueberries, making sure they are evenly coated in the sugar mixture.

Step 9

Spread the blueberry mixture evenly over the crust in the pan.

Step 10

Drizzle any excess juice in the bowl over the filling.

Step 11

Crumble the remaining dough over the blueberry filling.

Step 12

Bake until the top is light golden brown, about 45-50 minutes.

Step 13

Cool completely before cutting into squares.

Step 14

Serve.
