IngredientsFor the dressing: • 1/4 cup plain Greek yogurt • 1/4 cup mayonnaise • 2 tablespoons white vinegar • 1 tablespoon sugar • 1 teaspoon poppy seeds • salt, to taste • pepper, to taste For the salad: • 3 cups baby spinach • 3 cups romaine lettuce or other crispy greens • 10 slices of bacon, cooked crisp and crumbled • 2 cups strawberries, washed and quartered • 1 ripe avocado, sliced • 1/4 cup almonds, sliced
In a medium bowl, whisk together the Greek yogurt, mayonnaise, white vinegar, sugar, poppy seeds, salt, and pepper.
In another medium-sized bowl, combine the baby spinach and romaine lettuce.
Divide the mixed greens between two big plates.
Top each plate with equal portions of the bacon, strawberries, avocados, and sliced almonds.
Drizzle both salads with the dressing.
