Ingredients

2 large chicken breasts
salt, to taste
pepper, to taste
1 cup panko bread crumbs
1/2 cup parmesan cheese, grated
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 egg
1 cup marinara sauce
1 1/2 cups mozzarella, shredded
2 tablespoon parsley optional, minced, for garnish

Directions

Step 1

Preheat the oven to 400 degrees F.

Step 2

Ensure your oven rack is positioned in the space second from the top.

Step 3

Line a large baking sheet with aluminum foil.

Step 4

Cut the chicken breasts in half lengthwise. Try to cut them to about the same size.

Step 5

Pound the chicken with a meat tenderizer so that they are all evenly thick.

Step 6

Generously season the chicken with salt and pepper.

Step 7

In a mixing bowl or on a rimmed plate, combine the bread crumbs, parmesan, oregano, garlic powder, kosher salt, and black pepper.

Step 8

Whisk the egg in a separate dish.

Step 9

Dip a chicken breast in the egg and then into the bread crumb mixture.

Step 10

Once completely coated, place each chicken piece on the baking sheet.

Step 11

Repeat these steps with the rest of the chicken.

Step 12

Bake the chicken until it reaches an internal temperature of 165 degrees F, about 15 minutes.

Step 13

Remove the chicken from the oven and flip each piece over.

Step 14

Pour the marinara sauce over the chicken and top with the mozzarella cheese.

Step 15

Place the chicken back in the oven to broil on high until the chicken is golden and crisp, and the cheese starts to bubble, about 3-4 minutes. Watch carefully so that it doesn't burn.

Step 16

Remove the chicken from the oven and serve immediately.
