Ingredients• 1 (16-ounce) can of refried beans • 1 cup salsa • 1 cup long-grain rice, cooked • 2 cups cheddar cheese, shredded and divided • 12 (6-inch) flour tortillas • shredded lettuce, optional, for topping
Preheat the oven to 375 degrees F.
Grease a 9x13-inch baking dish.
In a large bowl, combine the beans, salsa, rice, and 1 cup cheese.
Spoon about 1/3 cup of the mixture and place it off-center on top of each tortilla.
Fold the sides and ends over the filling and roll the tortilla up.
Arrange the burritos in the prepared baking dish.
Sprinkle the burritos with the remaining 1 cup cheese.
Cover and bake until heated through, about 20-25 minutes.
Top the burritos with lettuce.
