Apple Walnut Salad

A little sweet, a little tangy, and a lot crunchy, this Apple Walnut Salad is the perfect accompaniment to dinner or lunch. Or it can stand on its own with protein like roast chicken or grilled pork on top. You’ll definitely keep the doctor away with two types of apples in this recipe. The gorgonzola cheese adds a little funky interest, and the apple cider vinaigrette ties the Apple Walnut Salad all together.
Combine the romaine, red leaf lettuce, red apple, green apple, Gorgonzola, walnuts, red onion, and dried cranberries in a salad bowl.
In a small bowl, whisk the cider, vinegar, honey, salt, and pepper.
Gradually whisk in the walnut oil.
Drizzle the dressing over the salad, tossing it to coat.
Serve it immediately, and enjoy!
