They say an apple a day keeps the doctor away, and once you crunch on some Apple Slaw, you'll be craving it on the daily–which is basically the same thing, right? It's technically even better for you, too, because there's nourishing cabbage, crunchy carrots, sweet red bell peppers, and fresh green onions mixed with the crispy red and Granny Smith apples. Covered in a creamy, sweet dressing, Apple Slaw will have you feeling fine and dandy!


Ingredients

3 cups cabbage, chopped
1 red apple, unpeeled, cored, and chopped
1 Granny Smith apple, unpeeled, cored, and chopped
1 carrot, grated
1/2 cup red bell pepper, finely chopped
2 green onions, finely chopped
1/3 cup mayonnaise
1/3 cup brown sugar
1 tablespoon lemon juice

Directions

Step 1

In a large bowl, combine the cabbage, red apple, Granny Smith apple, carrot, red bell pepper, and green onion.

Step 2

In a small bowl, mix together the mayonnaise, brown sugar, and lemon juice.

Step 3

Pour the dressing over the salad.

Step 4

Serve.
