Amish Dinner Rolls

With just a little patience, you can transform your leftover mashed potatoes into rich, tender rolls just calling out for a pat of butter or a meaty sauce to soak up! Amish Dinner Rolls are fluffy, perfect pillows—the perfect side dish for a relaxing evening meal or a family potluck. Amish Dinner Rolls have that touch of country cooking that makes them delectable and delightful. Make sure you try them out in sandwiches!


Ingredients

2 large eggs
1/3 cup sugar
1 1/2 teaspoons salt
6 tablespoons butter, softened
1 cup mashed potatoes, unseasoned and lightly packed
2 1/2 teaspoons instant yeast
3/4 cup water, lukewarm, using the leftover water from boiling the potatoes if possible
4 1/4 cups all-purpose flour, divided, plus more as needed
butter, melted, optional, for topping

Directions

Step 1

Lightly grease a bowl.

Step 2

In a separate large bowl add the eggs, sugar, salt, butter, mashed potatoes, yeast, water, and 3 cups flour. Mix until combined, carefully adding more flour until a soft dough forms. You may not need all of the flour.

Step 3

Place the dough in the prepared bowl and cover with plastic wrap. Let the dough rise in a warm place until it's doubled in size, about 1 1/2 hours.

Step 4

Lightly grease a 9x13-inch baking pan.

Step 5

Gently deflate the dough.

Step 6

Heavily flour a work surface.

Step 7

Place the dough on the floured work surface and knead, adding flour as needed, to form a soft, workable dough.

Step 8

Divide the dough into 24 balls and place them in the prepared baking pan.

Step 9

Cover the baking pan with lightly greased plastic wrap. Let the dough rise until puffy, about 1 1/2-2 hours.

Step 10

Preheat the oven to 350 degrees F.

Step 11

Remove the plastic wrap and bake until the rolls are golden brown and set, for about 20-25 minutes.

Step 12

Brush with melted butter.

Step 13

Serve!
