Chunks of fluffy potato and hearty egg mix and mingle in creamy and tangy mayonnaise for a refreshing side that's ready to be plated up alongside ribs and poultry. Ingredients
• 5 pounds of red potatoes • 6 eggs • 2 cups mayonnaise • 1 onion, diced • 2 green onions, thinly sliced • 1 small green bell pepper, seeded and diced • 3 stalks of celery, thinly sliced • 2 teaspoons salt • 1 teaspoon ground black pepperDirections
Bring a large pot of water to a boil. Add the potatoes and cook until tender but still firm, about 15-20 minutes.
Drain the potatoes and allow them to cool.
Cut the potatoes into cubes.
Place the eggs in a saucepan and cover them with cold water.
Bring the water to a boil and then immediately remove the saucepan from the heat.
Cover and let the eggs stand in the hot water for 10-12 minutes.
Remove the eggs from the hot water and allow them to cool.
Peel and chop the eggs.
In a large bowl, combine the potatoes and the eggs.
Mix the mayonnaise, onion, green onions, green peppers, and celery into the potato and egg mixture.
Season with the salt and pepper, mixing to combine.
Cover and refrigerate the potato salad for at least 2 hours and up to overnight.
Serve chilled.
