7-Up® Pound Cake

7-Up® has the reputation of making everything better–punches, mixed drinks, marinades, 7-Up Pound Cake... Hold up, cake? You read that right. Think of your favorite sweet and rich vanilla pound cake, but even lighter and fluffier! And then imagine it drizzled with a zesty, sugary glaze derived from the classic citrus soda. That's a 7-Up Pound Cake. Put your trust in the pop.

Preheat the oven to 350 degrees F.
Grease and flour a 10-inch fluted or plain tube pan.
In a large bowl, cream the butter and sugar with a hand mixer until light and fluffy, about 5-7 minutes.
Add the eggs, one at a time, to the butter mixture, beating well after each addition.
Beat the lemon juice and vanilla into the butter mixture.
Alternate adding the flour and the 3/4 cup 7-Up to the butter mixture, about 1/3 of each at a time, beating well after each addition.
Transfer the batter to the prepared pan.
Bake the cake until a toothpick inserted in the center comes out clean, about 1 hour 5 minutes-1 hour 15 minutes.
Take the cake out of the oven and cool in the pan for 20 minutes.
After 20 minutes, transfer the cake from the pan to a wire rack to cool completely.
In a small bowl, mix the confectioners' sugar, lemon juice, and the remaining 7-Up until it reaches the preferred consistency.
Stir in the zest.
Drizzle the glaze over the cake once the cake is completely cooled.
Slice and serve!
