Ingredients

2 teaspoons unsalted butter
2 teaspoons olive oil
1 pound fresh sugar snap peas, with stem end and strings removed from each pod
1/2 teaspoon black cracked pepper
1 teaspoon coarse salt, plus extra to serve
1/8 teaspoon cayenne pepper, optional

Directions

Step 1

Heat the butter and oil together in a large pan over medium-high heat.

Step 2

Once the butter melts, add the snap peas and toss them in the pan to coat them in the butter and oil mixture.

Step 3

Season to taste with pepper, salt, and cayenne.

Step 4

Sauté until the snap peas are tender and crisp, about 4-5 minutes.

Step 5

Transfer the peas to a serving bowl and season with additional pepper and coarse salt to serve.
