Grease a 9x9-inch pan and line it with waxed paper. Set it aside.
Place the semisweet chocolate pieces and 1 teaspoon of the canola oil on the top of a double boiler, making sure that the water is just barely simmering.
Stir the chocolate mixture frequently and scrape down the sides with a spatula to avoid the chocolate from burning.
When the chocolate is completely melted, stir in 1/4 teaspoons of the peppermint extract.
Pour the melted chocolate into the previously prepared pan, spreading it evenly over the pan. It should be at the bottom.
Garnish half of the peppermint candies over the top of the chocolate layer.
Refrigerate the bark until it is completely hardened, about 1 hour.
Put the white chocolate and the remaining 1 teaspoon canola oil on top of a double boiler over just barely simmering water.
Repeat the same melting and pouring process for the white chocolate, pouring it into the pan on top of the semisweet chocolate.
Garnish the top of the melted white chocolate with the remaining peppermint candies.
Refrigerate the pan once again until the white chocolate hardens, about 1 hour.
When the bark has hardened, remove the candy from its pan.
Break the bark into small pieces to serve and share with others.
